Coconut Curry with TVP, Peas and Rice for 2
First soak the TVP for 5-10mins in water and drain.
Start cooking your rice.
Chop the onion and in another pan cook the onion in a little oil until golden add a pinch of salt. Add a bit more oil and add the all the spices. Stir well and roast the spices to release their flavours. Add the TVP to the pan and stir for 2 mins then pour in the coconut milk and cook until thick. Add seasoning if required and serve with rice.
